Food for thought- and to eat.

I have been a vegetarian for about 31 years now. I was actually first a strict vegan, now I also consume dairy products and eggs, too. This was the 1990´s, so it was not easy to be a vegan in Finland back then. You could barely get soy protein products in stores. I learned how to cook when I finally moved out of my parents house. I was on my own, a poor student. Luckily, we get either free school lunches in Finland and when I was at business school in Savonlinna in the 90s, I actually got very good vegan food every day. ´The daily lunch was probably the high point of mainly shitty school days back then, as my so called class mates and friends were really nasty people, who spread false rumours about me. But enough about the bullying, let´s talk about tacos. And stuffed tortillas. My new thing is Mexican food, or tex mex, or whatever you want to call it... does not really matter to me, as long as the cuisine is tasteee. (insert Chef´s kiss here). Pictured above are two stuffed tortillas with grated cheddar and some sour cream with taco spice mix. We had some yesterday. And the day before. So those are truly tried, tested and tasty. 


How to make these stuffed tortillas:

Prepare the dry soy crush according to which brand you are using. Sorry, I can not really give more exact instructions here, as I made this dish in quite a free style-style! But make enough to fill 8 medium sized tortillas (I used Santa Maria brand tortillas). I usually boil the soy in salted water for a couple of minutes. Then I strain it. 

Finely chop one large onion or two smaller ones. 

Finely chop red bell pepper. One or two is fine. Remember YOU can switch the ingredients to suit your diet or taste. 

Heat a pan, add some cooking oil. 

Sautee the chopped onion and peppers until soft. Then add the boiled soy, or which protein you choose to use, to the pan. 

Meat lovers can fry some minced beef, for example. 

Add a can of store bought taco sauce or salsa. Well, of course you can DIY it! but if you want to make life easier, then just pop in your local supermarket and hey pesto! you got some sauce! 

Add a can of black beans and a can of corn. I usually turn the heat down at this point. And  yes, if the beans and corn in the cans are in that can liquid, then strain and rinse the beans and corn before you add them to the pan. Well, that is how I roll! 

Add some Mexican spice mix. I bought some ready made Mexican spice mix at Normal. Only one euro for a bag of spice! Niiiiiiice! 

Yes, you go to mix all the ingredients together in the pan and the spice too, d´oh! 

Now you should have plenty of mouth watering filling for the tortillas. Now pre-heat your oven to 150 degrees (Celsius). Not American, so sorry, do not know what the Fahrenheit degrees are...

Now, oil a non stick oven dish with a brush. Then add some of the filling to one tortilla, then roll the tortilla into a burrito. Then put the burrito into the oven proof dish and repeat until you have filled eight medium sized tortillas. Or how many YOU choose to make. 

Top the burritos with grated cheddar cheese. Put the dish in the oven for about 10 minutes, or until the cheese has melted and got a nice golden colour. 

You can make the sour cream with the dry taco mix -sauce while the dish is in the oven. Put the spicy sour cream in the fridge to set. Then it is time to enjoy! Bon apetito! Because it is taco-taco-burrito time!
